Eva's Salad Dressing
Recipe from Eva
Ingredients:
- various greens (Romaine, iceberg, spinach)
- tomato wedges
- thinly sliced cucumber
- 2-3 garlic cloves, minced
- garlic salt
- fresh herbs (dill, basil)
- sweet onion
- red/yellow pepper
- yellow squash or zucchini
Dressing
- 1-2 tsp of sugar
- ½ - 1 tsp salt
- Ground cumin
- Dry mustard
- Freshly ground pepper
- Olive oil and canola oil, the proportion being 2/3 of olive oil
- Rice vinegar – slightly less than oils
- 2-3 drops of white vinegar
Directions:
- In a large non-plastic salad bowl mix various salad ingredients.
- Sprinkle the dressing ingredients on top.
- Refrigerate, uncovered, for at least 5 minutes, mix lightly, serve.
- Options: add a can of drained beans with feta cheese or slices of cold meats, hard cheeses, olives.
